Lentil Quinoa Sloppy Joe's are a vegetarian option for someone who still craves a sloppy joe

1 Tbs. vegetable oil
1/2 c. finely chopped onion
1/2 c. shredded carrot
1/2 c. finely chopped red bell pepper
2 cloves garlic, minced
1 c. lentils, picked over and rinsed
1/2 c. quinoa, rinsed
1 tsp. cumin
dash cayenne
2 tsp. balsamic vinegar
1/4 c. ketchup
1 Tbs. stone ground dijon mustard
1 can (14.5 oz.) crushed tomatoes
2 tsp sugar (or 1 tsp. agave nectar)
1 c. low-sodium vegetable broth
2 c. water
1 tsp. salt
1 tsp. pepper
6 hamburger buns

Add vegetable oil to a large pot over medium heat. Add onion and cook 2 minutes.
Add carrot and red bell pepper and cook 1 minute.
