Maple Pumpkin Chocolate Chip Cookie

Gluten Free cookies made with pumpkin and coconut flour.

1/3 cup pumpkin puree
1/4 cup pure maple syrup
1 teaspoon vanilla extract
2 large eggs
1/3 cup coconut flour
1/2 teaspoon pumpkin pie spice
1/4 teaspoon salt
1/8 teaspoon baking soda
1/3 cup Bob's Red Mill Gluten Free Rolled Oats
1/3 cup semi-sweet (or dark) chocolate chips
1/4 cup chopped pecans

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
