Margarita Chicken with Fiesta Rice

A fun and festive meal that can be almost completely prepared ahead of time!

For Chicken:
1 lb boneless chicken breasts
1/2 cup margarita mix
2 tbsp tequila
1 tsp chili powder
1/2 tsp salt
1/2 tsp pepper
1/4 cup olive oil
For Sauce:
1 cup light sour cream
2 tbsp light mayonnaise
juice from 1 lime
1 small clove garlic, grated
2 green onions, finely chopped
2 tbsp cilantro, finely chopped
1/4 tsp salt
1/4 tsp pepper
For Rice:
1 cup white rice
2 cups water
juice from 1/2 of a lime
2 tbsp cilantro, finely chopped
1/2 (15 oz) can black beans, drained and rinsed
1/2 cup frozen corn, thawed
