Marinated Pork Chops with Summer Veggies

A perfect summer dish prepared on the grill.

½ c soy sauce
½ c water
2 Tbsp lemon juice
1 Tbsp brown sugar
2 Tbsp vegetable oil
½ tsp Tobasco
1 clove garlic, crushed
¼ tsp pepper
1 lb pork chops (or tenderloin)
Small zucchinis, halved lengthwise
Small yellow squashes, halved lengthwise
1) Mix together all of the ingredients for the marinade. Pork can marinate up to 24 hours in a glass or ceramic dish (not metal). Vegetables should marinate 2-4 hours. 2) Remove meat and vegetables from the marinade and grill. Or, roast in the oven at 350° for 45 minutes with some of the marinade left in the pan.
