Mexican Caesar Salad with Chicken

Mexican Caesar Salad is crisp, bright and refreshing. Incredible tangy herb dressing with roasted pumpkin seeds and crunchy tortilla strips on top. Delish!

Cilantro Pepita Dressing
2 medium Poblano or Anaheim chiles, roasted, peeled and seeded
? cup roasted pepitas (pumpkin seeds)
3 cloves garlic, peeled
¼ teaspoon ground black pepper
1 teaspoon salt
½ teaspoon garlic powder
½ teaspoon onion powder
10 ounces salad oil
¼ cup red wine vinegar
1 tablespoon lemon juice
6 tablespoons grated Cotija cheese (substitute Parmesan if you can\'t find this cheese)
2 small bunches cilantro, stemmed
1 cup mayonnaise
3 tablespoons water

3 corn tortillas
vegetable oil
2 large heads romaine lettuce, rinsed and spun dry
? cup finely grated Cotija cheese
1 roasted red bell pepper, peeled and cut into julienne strips
½ cup pepitas (roasted pumpkin seeds)
1 cup cooked chicken or steak, chopped (optional)
