This Mexican Quinoa Bake is an amazing, flavorful dinner ready in just 30 minutes. Creamy and delicious, this dish is filled with quinoa, fresh vegetables, roasted poblano pepper, black beans, cheese and Campbell’s Mexican Style Tomato Soup.

14.5 ounce carton Campbell’s Mexican Style Tomato Soup
1 cup quinoa, prepared
1 cup Fontina cheese, shredded
1 cup Cheddar cheese, shredded
¼ cup purple onion, diced
½ red bell pepper, diced
¼ cup cilantro, chopped
¼ cup roast poblano chiles or can green chiles
½ teaspoon cumin
½ teaspoon chili powder
Optional Toppings:
Avocado, chopped
Tomatoes, chopped
Jalapenos, sliced
