Mexican Tortilla Lasagna

This is a family favorite . I came up with this recipe for a Healthy alternative that kids would love.

6 large Flour Tortillas
2 10 ounce cans Black Beans, rinsed and drained
2 cups Cheddar Cheese, shredded
1 12 ounce jar Salsa
2 small cans Corn Niblets, drained
1 bunch Scallions, chopped
1.Spray the bottom of a large skillet with a non stick vegetable spray. 2.Place a flour tortilla on the bottom of skillet Spread about 2 tbsp. of salsa all over the tortilla, like your making a pizza 3.Then sprinkle about 3 tbsps. of black beans and 1/4 cup of the corn onto the tortilla Top with a little bit of scallions and cheese 4.Top with another tortilla and repeat the process 4 times 5.Finish by putting last tortilla on the top Put entire skillet into a preheated 350 degree oven for 30-40 minutes 6.Remove from oven and let it rest for 15 minutes. Cut into wedges and serve with sour cream
