Minestrone Risotto

Two Italian classics combine for one fantastic meal!

3 slices bacon, chopped fine
1 T. olive oil
1/2 large sweet onion, minced
3 carrots, peeled and chopped
2 stalks celery, peeled and chopped
1 1/2 c. arborio rice
3 cloves garlic, minced
1/2 t. salt
1/2 t. dried rosemary
1/2 t. dried oregano
5 c. beef, chicken or vegetable stock
1 can (15 oz.) white cannellini beans
1 can (14.5 oz) petite diced tomatoes, drained (I used Red Gold Petite Diced with Garlic and Olive Oil)
