Mini Egg Cone-olis

A twist on the traditional cannoli, a mini egg filling stuffed in a sugar cone.

1 cup light ricotta cheese
1/2 cup cream cheese, at room temp
1/4 cup confectioners sugar, with some for dusting.
1 tsp pure vanilla extract
1/2 -2/3 cup crushed mini eggs
