Mini Meatloaf Madness

These little meatloafs are the perfect portion size, or kiddie size! A delicious meatloaf recipe in a muffin tin to make dinner time go a little smoother.

1lb hamburger
1 can diced tomatoes
1 egg
1 sleeve (more or less depending on taste) saltines
1-2 tbsp dried onion
1 tbsp garlic powder
Seasoning salt
3/4 cup ketchup
4 tbsp brown sugar
1 tsp dried mustard
1 tsp nutmeg

Combine meat, egg, crushed crackers, diced tomatoes and seasoning in a large bowl. Scoop meat mixture (with a spoon or get handy and use an ice cream scooper!) into muffin tins, filling pretty full. Bake...
