Mom's Coffee Cake

114

This is the coffe cake I grew up with. My mom loved this moist, cinnamon flavored coffee cake and made it whenever one of her girlfriends was coming over to visit.

10
1 cup buutter, softened
1 1/4 cup sugar
2 eggs, beaten
1 cup buttermilk - may substitute one cup sour milk
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup chopped pecans
1 teaspoon cinnamon
4 tablespoons sugar
Preheat oven to 350 degrees. Prepare a 9" angel food cake pan by buttering all sides and bottom. Cream together the butter and sugar. Add eggs, buttermilk and vanilla. Gradually add flour, baking powder and baking soda. In a seperate small bowl, mix together the cinnamon sugar and chopped nuts. Pour 1/2 of the batter in to the angel food pan. Sprinkle half of the cinnamon sugar mixture over the batter. Add the remaining batter and sprinkle again with the last half of the cinnamon sugar mixture. Bake 55-60 minutes or until a toothpick comes out clean. Let sit 5 minutes and remove the center of the angel food pan and let cake cool completely. Remove from the pan and transfer to a plate.
