Mom's Mexican Rice

A traditional Mexican rice dish.

2 cups white rice, uncooked
2 T. vegetable oil
1 can Rotel
3 cups water
3 chicken bouillon cubes
Cavender Greek Seasoning, to taste
Garlic powder, to taste
1/2 cup chopped onion, if desired
Brown rice in vegetable oil, stirring frequently to prevent burning. Add undrained Rotel, water and bouillon cubes (and onions). Cook covered over medium high heat until liquid mostly absorbed. Uncover, season to taste. Continue to cook, uncovered until all liquid has been absorbed and rice is tender.
