Muenster Cheese Chicken Enchilada

This is a two cheese creamy chicken enchilada dish, topped with fresh vegetables.

8 Flour tortillas
4-5 Chicken breasts
2 - 10 oz Cream of Chicken soup
1 -16 oz Sour Cream
1 - 4 oz can diced Green Chilies
1 - 4 oz can sliced Black Olives
1 cup shredded Muenster Cheese
1 cup shredded Cheddar Cheese
20 oz can Enchilada Sauce
Salt & Pepper

Topping
Shredded Lettuce
Green Onions
Cilantro

Boil and shred chicken breasts. Mix soup and sour cream. Stir in green chilies, olives and cheeses. Spoon mixture onto tortilla, roll and place in 9 x 13 baking dish. Pour enchilada sauce on top. Bake at...
