Mushroom Skewers

This is a very easy and tasty recipe for a healthy treat on any summer day!

1 lb white small mushrooms
1 small red pepper
1/2 of small red onion
1 cup olive oil
2 tbsp lemon pepper
2 tbsp garlic salt
1 tsp parsley flakes
1. In a bowl add olive oil, lemon pepper, garlic salt and parsley flakes. Mix and set aside. 2. Rinse mushrooms, cut off foot of mushroom and cut the mushroom in half it is large. 3. Cut red onion and bell pepper into large square pieces. 4. Mix all the vegetables in the oil and spices. 5. On a skewer, add mushroom, bell pepper, onion. Repeat again, leaving space in between each vegetable. 6. Preheat grill on high. 7. Grill skewers 5-6 minutes on each side. 8. Enjoy!
