Mushroom Stuffing

A healthier, vegetarian stuffing filled with onions, mushrooms, celery and lots of Thanksgiving spices.

1 loaf whole wheat with whole grains bread
3 tbsp. light butter
2 cups finely chopped onion
1 1/2 cups finely chopped celery
8 oz sliced mushrooms
2 tbsp. dried sage
2 tbsp. dried thyme
2 tbsp. poultry seasoning
2 tsp. kosher salt
1 tsp. fresh ground black pepper
1/2 cup low sodium chicken or vegetable broth
1/4 cup egg substitute
