My Broccoli Rice Casserole

Broccoli Rice Casserole is the easiest side dish that you will ever make! It all goes into one dish and is baked in the oven. It's made with frozen chopped broccoli and you don't even need to thaw out the broccoli. It's great for a weeknight and also for your guests. The addition of the dry onion soup mix gives it such a great and rich flavor. This recipe also freezes very well and can be made a day in advance. To see how, I made it, keep reading!

1 (10 oz) pkg frozen chopped broccoli
1 cup uncooked long grain white rice
1 pkg. dry onion soup mix
1/2 stick of butter or margarine
2 cups water
scallions for garnish (optional)

Preheat oven to 350 degrees
In a large oven proof casserole dish add all the ingredients and stir. Cover the casserole and bake for 1 hour, stirring half way through. Garnish with scallions, if using. Enjoy!
