My 'One and Only' Carrot Cake Recipe

This is my 'One and Only' Carrot Cake Recipe! It's been one of my family's favorites for many, many years. This recipe is so delicious and moist because of the grated carrots and the crushed pineapple! But to make it even better, it's topped off with the perfect Walnut Cream Cheese Frosting!

Carrot Cake:
3 c. unbleached or all-purpose flour
2 c. granulated sugar
1/3 c. ground oats
2 t. baking powder
2 t. baking soda
2 t. cinnamon
1 t. salt
1 1/4 c. vegetable oil
4 large eggs
2 c. finely grated carrots
1 c. crushed pineapple w/juice

Walnut Cream Cheese Frosting:
1 - 8 oz. package cream cheese or Neufchatel Cheese, softened to room temperature
1/2 c. butter, softened to room temperature
1 lb. (3 3/4 c.) confectioners sugar
1 t. vanilla extract
1 c. finely chopped walnuts
