Nanny's Red Beans & Rice

Growing up my grandmother, or I should say Nanny, since that is what we called her, made this recipe quite often. She was from the heart of Lousiana and shared much of her southern cooking with us. I can still remember helping her sort the beans, and watching as the beans simmered on the stove all day. She took such great care in making sure they were absolutely delicious! I now have made this recipe for my family for 30 something years and my kids always love it!

Leftover boned ham, (I like to leave some meat on it) About 2 cups of ham.
1 onion chopped
1 lb. small red beans (I sometimes use black beans)
1 tsp. Lemon Pepper
2 tsp. garlic salt
Pepper
1 green pepper chopped (optional)
6 Cups water
