Never Fail Pad Thai

You love Pad Thai, but you can only get it once in a while when you actually find a Thai restaurant, right? Wrong! Now, you can make it yourself with just a few ingredients and a little effort!

250 grams rice noodles
50 grams chicken (or shrimp)
3 Tablespoons safflower oil
20 grams spring onion
1 Tablespoon palm sugar or brown sugar
2 Tablespoons fish or soy sauce
2 Tablespoons oyster or mushroom sauce
1 egg
30 grams bean sprouts
1 Tablespoon chopped garlic
50 grams cubed tofu
1/2 cup water
Handful of chopped nuts to garnish
1 lime quartered to garnish
1. Heat the oil in a wok over medium low heat and add the garlic, stirring until it\\\'s fragrant but not browned. 2. Add chicken (or shrimp) and cook for 1 minute. Then add the tofu and heat through. 3. Push the tofu and chicken or shrimp to one side and crack the egg in the wok. Wait until the egg white starts to turn firm, then use the spatula to scramble the egg and mix it with the tofu and chicken or shrimp. 4. Move the mix to one side and add the noodles and water to the wok. 5. Season the noodles only with the fish sauce, oyster sauce and sugar. 6. Mix everything together. 7. Add the bean sprouts and spring onions and stir a couple times to heat everything through. 8. Turn off the heat and serve garnished with peanuts, extra bean sprouts if you wish and some fresh lime juice!
