New Orleans Red Beans & Rice

Every time I make this, it is always cleaned out! Don't be afraid of the list of ingredients; it's so easy to make in the crockpot.

1 lb dried red beans, rinsed
1 lb chopped ham
1 lb smoked ham hocks
1 large onion, chopped
4 celery ribs, chopped
1 green bell pepper, chopped
1 teaspoon Montreal Steak Seasoning
1 tablespoon balsamic vinegar
1 tablespoon red wine vinegar
1 teaspoon smoked paprika
1/2 teaspoon Emerill's seasoning
1 teaspoon hot sauce
4 bay leaves
3 tablespoons dried parsley
1 teaspoon dried thyme
1/2 lb smoked sausage, chopped
3 oz pepperoni, diced
3 tablespoons garlic, minced
5 chicken bouillon cubes
8 cups water
2 cans pinto beans, pureed
Cooked white rice
Place the red beans in a large bowl and cover with 4-5 inches of water over the top of the beans. Soak 8 hours or overnight. Drain and rinse well. Cut up sausage into bite size pieces and pepperoni into sections.
