Noodle Bowl with Chicken, Snow Peas, and Bell Pepper

Delicious noodle dish with chicken and veggies and Chinese flavors. Simple to make and kid friendly.

1 lb. chicken breast, cut up into 1 inch pieces
1 box pasta (such as fettuccine or linguine)
2 cups snow peas
1 large bell pepper, sliced
1 c. chicken stock (or water and chicken bouillon)
3 TBSP. low sodium soy sauce
3 TBSP. brown sugar
1 TBSP. canola oil
1 TBSP. lemon juice
2 tsp. sesame oil
1 1/2 tsp. minced fresh ginger
1 1/2 tsp. minced garlic
2 1/2 tsp. cornstarch
1 box pasta (such as fettuccine or linguine)
2 cups snow peas
1 large bell pepper, sliced
1 c. chicken stock (or water and chicken bouillon)
3 TBSP. low sodium soy sauce
3 TBSP. brown sugar
1 TBSP. canola oil
1 TBSP. lemon juice
2 tsp. sesame oil
1 1/2 tsp. minced fresh ginger
1 1/2 tsp. minced garlic
2 1/2 tsp. cornstarch
-Start the water for the pasta
-In a bowl, combine the chicken stock, soy sauce, brown sugar, canola oil, lemon juice, sesame oil, ginger, garlic, and corn starch. This is your sauce. Set aside while you make the rest.
-While the pasta is cooking, saute the chicken in a little oil
-When the chicken is cooked through and the pasta is cooked, combine chicken and pasta, set aside
-In pan that you used to cook the chicken put in the snow peas and cut up peppers. Cook for 4 minutes or so until they are crisp/tender
-Add sauce and let thicken a bit.
-Add sauce/veggie mixture to the noodles and chicken.
-ENJOY!
