Oat Bran Muffins

Bran muffins are a power packed nutritious breakfast. This recipe was created after a friend introduced me to a delicious and moist oat bran muffin that she had bought in Monterey. She asked the bakery for the recipe but all she was able to obtain was a list of main ingredients. I fiddled around until I was able to create a muffin recipe that was comparable to the one from the bakery. These muffins have been a hit with the girls and their husbands and the grandkids.

1 cup oat bran
1 cup wheat bran
1 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 TBS cinnamon
2 eggs
½ cup maple syrup
1 cup plain nonfat yogurt (you can use soy yogurt)
1 tsp vanilla
2 TBS coconut oil
1 cup grated apple (1 medium apple)
1 cup grated carrots (2 carrots)
12 prunes chopped fine
½ cup chopped dates
½ cup raisins
1 cup wheat bran
1 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 TBS cinnamon
2 eggs
½ cup maple syrup
1 cup plain nonfat yogurt (you can use soy yogurt)
1 tsp vanilla
2 TBS coconut oil
1 cup grated apple (1 medium apple)
1 cup grated carrots (2 carrots)
12 prunes chopped fine
½ cup chopped dates
½ cup raisins
In a large bowl combine dry ingredients. In a small bowl mix eggs, maple syrup, yogurt, vanilla and oil. Add wet ingredients to dry and stir just until combined. Fold in apples, carrots and dried fruit....
