1 cup Quinoa or Quinoa/Sprouted Rice Blend
1 cup corn (fresh or frozen - thawed)
1 cup sweet peas (fresh or frozen - thawed)
2 cups chopped kale
1 can (15 oz.) black beans, rinsed and drained
3 tsp. chia seeds
1 each red and green bell pepper, seeded and chopped
1 cup matchstick carrots
2 ripe avocados, diced
Juice of one lime
1 tbsp. chili powder
2 tsp. fajita spice blend
sea salt and fresh ground pepper, to taste
