A healthy, and super quick alternative to traditional Beef Stroganoff, that is absolutely delicious.

¼ lb lean ground beef
1 small onion, chopped
1 cup cremini mushrooms, chopped
1 tsp pepper
1 cup egg noodles
1 ½ cups beef broth
1/3 cup sour cream
1 tbsp parsley
