One Pot Creamy Pumpkin Sage Pasta

Creamy vegan pasta is infused with flavors of pumpkin, garlic, white wine, shallot, and fresh sage for a healthy fall treat. Everything cooks in one pan, including the pasta!

4 cloves garlic
1 shallot
3 tbsp fresh sage
1/8 tsp black pepper
1/4 tsp red pepper flakes
1/2 cup cherry tomatoes
1/2 cup white wine
1 vegetable broth
1 non-dairy milk
3/4 cup pumpkin puree
8 oz pasta
1/2 cup toasted walnuts
