Orange and Honey Glazed Carrots

I hadn't made these carrots in a long time and I forgot how good they are. They are so. good. This recipe can easily be doubled for a crowd (or for those who love carrots, like me.) They are beautiful and delicious!

2 lb. carrots, peeled and sliced in 1" rounds
1/2 c. water
2 T. unsalted butter
2 T. honey
1/2 t. dried ginger
1 t. salt
1 t. orange zest
1/2 c. freshly squeezed orange juice
1/2 t. black pepper
Place water, butter, honey, ginger and salt in a large sauce pan and bring to a boil. Add the carrots, cover and simmer for 5 minutes. Remove the lid and continue to cook at medium heat until the liquid...
