8 oz. orzo pasta (1/2 box)
1 English cucumber, peeled and diced
4-5 tomatoes, cored, seeded and diced
3 T. grape seed oil
1 large shallot, minced
2 cloves garlic, minced
2 lemons, juiced
1 T. honey
1 t. dried dill
1 t. kosher salt
1/2 t. cracked black pepper
6 oz. fresh mozzarella cheese, crumbled (or use feta if you prefer)
