Oven Baked Turkey Tacos

Years ago I started making small changes to our taco night. I switched us from ground beef to lean ground turkey or chicken. Honestly, it's healthier and I don't think my family has any idea that I do this (sshhh don't tell). I also like to skip a side dish and really cram everything into the actual taco. Sometimes it's black beans. Sometimes rice, corn or any combo of them together. When I saw a recipe titled OVEN BAKED BEEF TACO over at Six Sisters Stuff, I knew I had

1 lb lean ground turkey

15 oz can black beans, drained rinsed

1 C canned corn, drained

1 T olive oil

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 C salsa (whatever variety you prefer, I use peach/mango or peach pineapple)

12 Taco shells, Stand and Stuff variety or similar

1 ½ C shredded cheese, Mexican blend or cheddar
