Paleo Butternut Squash Chicken Stew

This chicken stew is hearty and filling, and perfect for using any surprise butternut squash you find in your garden! (or was that just me?) I adapted this from Cookin Canuck to be Paleo (the hunter-gatherer diet) because my hubs is participating in a 2 month challenge with his gym. He absolutely loved this and kept telling me to blog it before I forgot how to make it! The leftovers freeze great, he's been taking it to work for lunch all week!

1 butternut squash (about 2 lbs) peeled, seeded & chopped into 1/2 inch pieces
4 cups chicken broth
2 lbs boneless skinless chicken (thighs or breast), cooked and shredded
1 Tbsp avocado oil
1 medium yellow onion, diced
1/2 tsp kosher salt
5 cloves garlic, minced
1 1/2 tsp dried oregano
1 can (14.5 oz) petite diced tomatoes with green chiles
freshly ground black pepper to taste
1/4 cup minced fresh parsley
