Paleo Greek Sweet Potato Salad

The flavors of a Greek salad coupled wit the sweetness of a sweet potato makes the perfect combination. Great if you are on a Paleo diet or want to get the added nutrition that sweet potatoes offer.

4 Sweet Potato, cubed
1 cup sweet peppers, chopped
½ red onion, chopped
½ cup kalamata olives
¼ cup feta cheese
¼ cup olive oil
? cup lemon juice
1 teaspoon crushed garlic
½ teaspoon oregano
salt and pepper to taste

Cube your sweet potatoes and cook them in a pot of water until fork tender.
Drain and cool in the refrigerator for 10 minutes.
