Paleo Maple Bacon Cupcakes with Bacon Fat Buttercream

These delicious grain and gluten free cupcakes are swirled with maple syrup, bacon and topped with Bacon Buttercream! You would never know they are Paleo!

8 Slices Fresh Premium Hickory Smoked Bacon, fat reserved and refrigerated over night. *
2 Cups Almond meal (213g) **
1/4 Cup Coconut flour (26g)
1/4 tsp Salt
1 tsp Baking powder
1/4 Cup + 2 Tbsp Butter, softened to room temperature
1/2 Cup Coconut sugar
1/4 Cup + 2 Tbsp Pure Maple syrup
2 Large eggs
1 tsp Vanilla extract
1 tsp Maple extract
For the frosting:
1/2 Cup + 1 Tbsp Butter, softened to room temperature
3 Tbsp Bacon fat, refrigerated
1/2 Cup + 2 Tbsp Pure Maple syrup
