Pan Fried Chicken Chimichangas

Chimichangas are essentially fried burritos and are incredibly delicious. Filled with chicken, rice, black beans, and enchilada sauce and are perfectly topped with guacamole, sour cream, and cheese.

4 cups shredded cooked chicken breast
1 ½ cups chicken broth
1 cup uncooked white rice (I use Jasmine rice)
1 cup red enchilada sauce
1 chopped onion
8 large/12 inch flour tortillas
1 can of black beans
Vegetable or Olive Oil for frying
OPTIONAL TOPPINGS: Mexican blended cheese, sour cream, guacamole/avocado, salsa
ADDITIONAL INSIDE INGREDIENTS: cheese, black olives, bell peppers, fresh corn
