Parmesan Russet and Sweet Potato Wedges

Great snack food for the children. Mix sweet potatoes and russet potatoes. Kids will be try to guess which one they are eating.

5 medium sweet potatoes
- 3 large russet potatoes
- 2 cups grated Parmesan cheese
- 1/2 cup olive oil
- 3 tsp of Rosemary
- 3 tsp of Basil
- 3 tsp of Oregano
- 2 tsp of kosher salt for roasting the potatoes
- 1 tsp kosher salt for parboiling the potatoes
- Water to parboil the potatoes
