Traditional pesto is made with basil and pine nuts. Yumology's latest and greatest kitchen conquest is a pesto made with fresh parsley, pistachio nuts and a refreshing splash of Chardonnay. The exotic yet familiar flavors that are embodied in our pesto creation are a grand accompaniment to a variety of dishes: poultry, fish, meats, eggs, even hearty vegetables. 2 cups of fresh parsley leaves removed from the stems
The juice of one fresh lemon
1/2 cup of shelled pistachios
1/4 cup of fresh grated Parmesan cheese
1 cup of olive oil
1 cup of Chardonnay
Add the pistachios and lemon juice to a food processor and chop until fine Add the Parmesan, parsley olive oil and Chardonnay Pulse until smooth
