Party Broth Shots

A perfect start to a winter party

1 litre Beef Stock (fresh is best, don't use stock cubes)
2 whole Brown Onions finely diced
10 grams Cracked Black Peppercorns
10 grams ground Himalayan Pink Rock Salt
10 grams Butter
8 slices of fresh Bread
50 grams grated Parmesan Cheese
1/4 bunch Chives chopped into 5cm pieces
In a 1.5 litre saucepan saute Onions with the butter until just caramelized. Season with the salt and pepper. Add the Beef stock and allow to come to the boil slowly then simmer for 10 minutes. Toast the bread slices and cut in rounds to the size of the top of your shot glasses. Place the toast slices on a tray and top with the grated Parmesan and place under a grill till just browned through. To assemble just ladle a the broth into the shot glasses top with the Parmesan croutons and a few chive sprigs on top. Serve warm.
