Philly Cheese Steak Stuffed Peppers

Easy low carb philly cheese steak stuffed peppers!

2 Bell Peppers (we like orange and red better than green)
8 oz sliced mushrooms
1 med onion sliced
2 cloves garlic
2 T butter
2 T olive oil
8 oz deli roast beef, thinly sliced
8 slices provolone cheese
Cut peppers in half lengthwise. Remove seeds and stem. Bring water to boil in a large sauce pan and boil peppers 10 min to soften. Remove and set on paper towels to drain. Saute mushrooms, onions and garlic in olive oil and butter until lightly carmelized. Salt and pepper to taste. 20 minutes. Slice roast beef into ribbons and add to onion / mushroom mixture. Cook 10 minutes more. Place pepper halves on a foil lined cookie sheet. Into each pepper: Place 1 slice of provolone cheese, 1/4 meat and mushroom mixture top with another slice of cheese. Bake at 400 for 10 - 15 minutes. I eat them just like this, but family likes to place stuffed pepper on a toasted hoagie roll.
