Middle Eastern style shortbread cookies with pistachios and rosewater plus a short history of pistachios.

1¾ cups flour
½ cup powdered sugar
½ tsp. salt
1½ sticks of unsalted butter (cut in cubes)
2 tsp. vanilla extract
1½ Tbsp. rosewater
½ cup pistachios
