Portobello-Chicken Lo Mein

A quick and easy Asian themed dinner

4-6 ounces whole wheat linguine
1 1/2 Tablespoons cornstarch
1 1/2 cups chicken stock/broth
1 1/2 Tablespoons rice vinegar
1 1/2 Tablespoons honey
1/2 teaspoon salt
3/4 teaspoon ground ginger
1 lb boneless skinless chicken breasts (or about 1 large breast), cut into strips
pepper to taste
2 Tablespoons sesame oil, divided
4 small carrots, sliced
1 medium onion, chopped
1 3/4 cup baby Portobello mushrooms, sliced
2 1/2 cups fresh spinach, torn
