Potato Dumplings

I think I learned this recipe while I was living in Germany. I loved a lot of the food I had while I lived there.

1 1/4 pounds peeled cooked potatoes
1 egg
salt and pepper
8 ounces milk
4 ounces grated cheese
oil
2 1/2 ounces butter
1 onion cut into rings
1 Tablespoon bread crumbs
Rub the hot potatoes through a ricer or sieve. Mix with the egg, seasonings, hot milk and 2 oz. grated cheese to a smooth paste. Put oil in a cup, enough to cover the spoon you will be shaping dumplings with. Dip spoon into oil then in the potato mixture to form dumplings, drop into a large pot of boiling water and cook until they rise to the top. Drain well, then the dumplings should be plated on a hot plate and sprinkled with the rest of the cheese. Lightly brown the butter, fry the onion rings with the breadcrumbs and pour sizzling over the dumplings.
