Typically, when thinking about vegetables you wouldn't describe them as "cute." However, baby bell peppers are - and they taste delicious when stuffed with seasoned, cheesy mashed potatoes! This recipe whips up a quick, easy, colorful side dish to complement any meal.

2 packs of baby bell peppers (usually comes with three peppers each)
2 large, cooked potatoes
1/2 cup shredded cheese
1 garlic clove, minced
Seasonings of choice (this recipe used cayenne and ground pepper)
