Pulled Pork Sandwich with Fresh Coleslaw and Grilled Pineapple

Pulled Pork:
2lb pork roast (fresh)
1/2 Medium onion (roughly chopped)
3/4 cups ketchup
1 tablespoon chili powder
1/2 teaspoon chili flakes
1 teaspoon liquid smoke
2 teaspoons dry mustard (or 2 tbs of wet mustard)
1 tablespoon molasses
2 teaspoons garlic powder
2 teaspoons black pepper
hamburger buns (Trader Joes Classic)
Fresh Homemade Coleslaw:
1/2 head green cabbage (shredded or grated)
1/2 head purple cabbage (shredded or grated)
2 cups carrots (shredded or grated)
1/8 cup apple cider vinegar
1 teaspoon sea salt
1/2 teaspoon black pepper
1/2 teaspoon celery seed
2 Medium spoonfuls of mayonnaise
2 tablespoons fresh pineapple juice

1 Large fresh pineapple

Pulled Pork:
Place sliced onion in bottom of slow cooker. Add your pork roast on top.
Mix all other ingredients and pour over pork.
Cook on low for 8 hours turning pork half way through.
