Pumpkin Pie Pudding Parfait

My version of pumpkin pie, in a parfait. A great choice for your Thanksgiving and Christmas dinners and it's gluten free! I made 6 large servings but you can make smaller servings too.

2 1/2 cups milk
3/4 cup light brown sugar
1/4 cup corn starch
3 eggs
15 oz can pumpkin (NOT pumpkin pie filling)
1/4 tsp salt
2 tsps vanilla
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
1 1/2 tsp LorAnn Pumpkin Spice Emulsion
Whipping cream
1/4 cup powdered sugar
In a large saucepan, mix milk, brown sugar and corn starch. Bring to boil, whisking constantly. Boil 3 minutes. In a large bowl, beat the eggs. Gradually add half of the heated milk mixture to the eggs....
