A vegetarian lasagna made with wonton wrappers pumpkin and sage

1 tbsp. minced fresh sage
2 tbsp. light butter
1/2 cup minced onion
2 garlic cloves, minced
1 (15 oz) can pumpkin puree (not pumpkin pie filing)
1 tsp. cinnamon
Pinch of nutmeg
1/4 cup part skim ricotta cheese
1/4 cup 2% fat cottage cheese
1/2 cup (2 oz) part skim mozzarella cheese
1/2 cup grated parmesan cheese
1 1/2 tsp. kosher salt, divided
1/4 tsp. fresh ground black pepper
