This Quick and Easy Jambalaya Casserole is a delicious twist on the New Orleans classic. The rice, chicken, shrimp, and sausage all cook together in one dish, making this a simple one-pot meal that involves almost no preparation and very little clean-up.

3 tablespoons butter, diced into small cubes
¾ lb. raw peeled and deveined shrimp
¾ lb. raw boneless, skinless chicken breast, cut into bite-sized pieces
6 ounces kielbasa, Andouille, Cajun-style, or other similar fully-cooked sausage, sliced into rounds
2 cups uncooked long-grain white rice
1 can condensed Cream of Celery soup
1 can condensed Cream of Chicken soup
1 can petite diced tomatoes (do not drain)
1 sweet onion, diced
½ red bell pepper, diced
½ green bell pepper, diced
1 teaspoon minced garlic
1-2 tablespoons Cajun seasoning
1 teaspoon salt
½ teaspoon pepper
Hot sauce, for serving
