Quinoa Pumpkin Muffins with Cream Cheese Filling and Streusel Topping

These are very delicious muffins made with quinoa flour, oats, and pumpkin. With a wonderful cream cheese filling and nutty streusel. Great flavor combined all in one muffin!

1¼ cup quinoa flour
½ cup packed brown sugar
2 teaspoons baking powder
1 teaspoon pumpkin pie spice
½ teaspoon salt
¼ teaspoon baking soda
2 eggs, beaten
¾ cup canned pumpkin
¼ cup milk
½ cup applesauce
1 cup old-fashioned oats
½ cup nuts or chocolate chips
Filling
½ cup whipped cream cheese
2 TB confectioners sugar-(mix these two together)
Streusel Topping
½ cup light or brown sugar
¼ cup old fashioned oats
2 tablespoons quinoa flour
¼ teaspoon cinnamon
1½ tablespoons butter
