Quinoa thai

So the other night I was thinking about what to make for dinner, and ended up thinking of a way to re-create a recipe for your typical “Fried Rice” with a Thai kick to it. I decided to use quinoa in place of rice to start. The result of it all was deliciousness! Here’s how I went about it.

1.5 c of uncooked quinoa
1/2 of a vegetable bouillon cube
2 c of vegetables of your choice
1/3 c raw cashews
2 fresh green onions
2 tbs coconut oil
2 tsp low sodium soy sauce
4 tbs peanut sauce
2 eggs
salt and pepper to taste
Rinse quinoa, then bring to a boil in pot over medium-high heat. Add in bouillon cube once water is boiling and reduce heat to simmer. Once fully cooked, cool quinoa completely. Cook vegetables in frying...
