RED RADICCHIO (CHICORY) & SMOKED SCAMORZA CHEESE RISOTTO

A classic Venetian dish became famous throughout Italy.

1 head red radicchio (Trevigiano)

½ a little smoked scamorza cheese

4 cups CARNAROLI RICE

1 glass red wine

1½ red onion

2 tbsp EVO oil

10 cups vegetables stock

1 cup grated Parmesan
Chop onion and radicchio and fry it slightly with oil Add rice and toast it for a couple of minutes. Put red wine and let evaporate.
