1 roasted green chili (I used Hatch and removed seeds) **
6 ears sweet corn, uncooked (about 4 cups)
2 tablespoons olive oil
1 yellow onion, diced
3 garlic cloves, minced
2 teaspoons Mexican Seasoning ***
4 cups low-sodium vegetable stock
1/3 cup light coconut milk or heavy cream
1 teaspoon salt, divided
