Roasted tomatoes, onions, and red bell peppers join other fresh vegetables and spices to create a refreshing soup that is served chilled as an appetizer, side, or main dish.

- 1 ½ pounds of yellow tomatoes, halved and seeded
- ½ cup red bell pepper, cut into ½” wide strips
- ½ cup red onion, quartered
- 1 small jalapeno
- 2 cloves garlic, minced
- 1 cup cucumber, peeled, seeded, and chopped
- ¼ cup olive oil
- 1 ½ teaspoons lime juice
- 2 teaspoons balsamic vinegar
- 2 teaspoons Worcestershire sauce
- ½ teaspoon cumin
- 1/2 teaspoon sea salt
- ¼ teaspoon black pepper, fresh ground
- 2 tablespoons fresh basil leaves, chiffonade
