This Roasted Vegetable Pasta Salad can be eaten warm or cold, as a main or side dish, and you can swap out the veggies depending on the season!

1 zucchini, cut into 1/4" slices
1 yellow squash, cut into 1/4" slices
1 red onion, cut into 1/2" slices
1 tsp minced garlic
1 Tbsp pure olive oil
salt and pepper ( to taste )
1 cup acini di pepe ( tiny round pasta )
2 cups spinach
1 cup Kraft Roasted Red Pepper Italian Dressing
